Recipe: Cranberry Goji Sauce

As many of you know, I love to use herbs in the kitchen.  Here’s a new take on a holiday favorite with the delicious addition of Goji berries (Lycium spp.). Goji berries are a wonderful adaptogen, helping to increase our body’s resilience to stress and support the immune system. They are packed full of antioxidants, help support healthy eyes and vision, lower cholesterol, and are also just plain yummy.

I prefer to make my cranberry sauce in a slow cooker but you can make this recipe on the stove top as well.

Cranberry Goji Sauce

 

1 pound of fresh organic cranberries
1/2 cup dried goji berries
1+ cup of raw honey  (add to your desired sweetness)
1/2 cup water
1 orange, juiced and zest
1 cinnamon stick
1/2 tsp. of allspice

Rinse cranberries and place in slow cooker with goji berries, water, cinnamon, and allspice. Cook on low until the berries are soft and break open.  Add orange juice and zest and continue to cook until the sauce is the desired consistency.  When the sauce is nearly the consistency you want, add honey to taste.  Add a little more water as needed.  When ready, remove from heat and serve cool.  Refrigerate leftovers.
